ANTIOXIDANT AND MECHANICAL PROPERTIES OF CARRAGEENAN-BASED BIODEGRADABLE PACKAGING WITH SPENT COFFEE GROUNDS ADDITION

The utilization of food industry by-products in the production of biodegradable packaging represents a perspective approach to reducing environmental impact and optimizing functional properties of packaging materials. This study evaluates the effect of adding dried spent coffee grounds (SCG) on the mechanical properties and polyphenol content of κ-carrageenan-based biodegradable packaging. Packaging materials were prepared with various SCG concentrations (0.1–0.75%) and compared to a control sample without the additive. Mechanical properties were evaluated by determining tensile strength and toughness using texture analysis, while the total polyphenol content (TPC) was determined spectrophotometrically. The results demonstrated that the addition of SCG led to a statistically significant (p < 0.05) increase in polyphenol content in all enriched samples compared to the control, with values rising alongside the increasing concentration of SCG. Regarding mechanical properties, a statistically significant (p < 0.05) increase in material toughness was recorded depending on SCG concentration, whereas changes in tensile strength were not statistically significant (p > 0.05). The results demonstrate that SCG addition enhances the functional properties of carrageenan packaging, advancing its potential for practical industry applications.
