Fallow deer (Dama dama) is an important game meat commodity and a relevant bioindicator of environmental contamination. This study quantified arsenic, cadmium and lead in fallow deer muscle from Slovakia using ICP-MS and provided a preliminary food safety interpretation. Muscle samples were microwave-digested
and analysed by ICP-MS with standard quality control procedures. All target elements were detected at low levels, and no exceedances were observed for cadmium and lead when compared against maximum levels commonly applied as a reference for meat. Overall, the results indicate a low contamination burden
in the analysed fallow deer muscle samples.
